Ginger+Cinnamon biscuits

One of the things I love about christmas is those spicy and warming scents and flavours of ginger and cinnamon, so when you out that together with biscuits I just can't resist baking some for my family and friends! With that in mind this blog post will be a mixture of a normal biscuit recipe and my own lil twist of some lovely christmas spice!

Ingredients for biscuits:

-250g butter

-140g caster sugar

-1egg yolk

-2 tsp honey

-300g plain flour

-2 tsp cinnamon

-2tsp ginger

Ingredients for icing:

-hot water

-icing sugar

How to make the biscuits:

-First mix the butter and sugar together

-Then add the egg yolk and honey and mix that in.

-Now you sift in the plain flour, cinnamon and ginger and gradually stir until it has a dough like consistency.

-Then using your hands mould the dough into a ball wrap in cling film and put in the fridge for around 30 min. (If you want you can use this time to do the washing up, have a quick nap, wrap some presents I mean the opportunities are endless.

-After those 30mins you then can roll out your dough using a rolling pin to around 1cm thick (make sure you put plenty of flour down on table, dough and rolling pin otherwise it will stick! I know this from experience!) At this point you should set the oven to 180 degrees.

-You can now cut them out into shapes either by hand with a knife or with a shape cutter.

-Then line your baking trays with baking paper and oil the tins with butter. Put your dough onto the trays and put in the oven for around 15 min.

Now for the icing:

-First boil the kettle and put the water in a small pot. Then put icing sugar into a pouring jug and gradually add the water 1tsp at a time until the consistency is pourable but not so thin that will just run off the biscuits.

-NOW DECORATE
