Blueberry & Vanilla Cake
Heyy it’s been a while! So thought I’d make a comeback with a delicious cake recipe that I made for Easter! (But can defo be made all year round)
Blueberry and Vanilla Sponge Cake:
Ingredients:
250g Softened Butter
250g Caster Sugar
4 Medium Eggs
225g Self raising flour
80g Blueberries (I used frozen ones which I just defrosted and pressed to get any extra liquid out)
1 teaspoon of vanilla extract
Method:
Preheat the oven to 180 degrees c and line two baking tins with grease proof paper
Cream together your butter and sugar in a large mixing bowl until smooth and no lumps
Now in a small bowl crack your eggs into it and mix with a fork before gradually adding and stirring them into your mixture
Then sieve your flower into the cake mix and stir till completely combined
Its now time to add your vanilla extract and blueberries! (make sure you have gotten any excess liquid out or your cake will be soggy EWWW! I did this my simply pressing them in a kitchen towel)
Once your mixture is completely mixed! You’ll want to spoon your mixture into your pre prepared baking tins evenly!
Finally, put them in the oven for around 25-35 mins (or until a knife comes out clean when poked into the cake)
