Crazy for Carrots
Today's post is a Carrot cake recipe that myself and my mum attempted. Its a Paul Hollywood (with a few changes) recipe for all you fellow Bake off fans out there!
INGREDIANTS:
For the cake:
-1 tsp baking powder
-1 1/2 tsp ground cinnamon
-1/2 tsp mixed spice
-1/2 tsp ground ginger
-230g light brown muscovado sugar
-Zest of 1 satsuma
-100g pecans (would recommend chopping small recipe said halved but I think smaller would be better)
-260g grated carrots
-3 eggs
-155ml sunflower oil
For icing:
-50g butter
-200g full-fat cream cheese (just use philadelphia)
-100g icing sugar
-Grated zest of an orange
For orange peel decoration:
-1 orange
-100ml water
-100g caster sugar
(okay so this recipe looks complicated but once you scroll down you'll see how easy peasy the steps are!)
METHOD:
For the cake:
-Preheat oven to 180c/Fan 160c/Gas 4
-Grease a 18cm loose bottom round cake tin and line with baking paper (you'll need a piece for the bottom and on strip to rap around the inside of the edges)
-Sift together the flour, baking powder and spices into a big bowl.
-Then add the sugar, zest, pecans and grated carrots and stir until combined.
-Now stir in the beaten eggs and oil to mix until oil seems to disappear into mixture.
-Finally put your mixture into the cake tin and out in oven for 1 hour (until knife comes out clean) You can then leave it too cool for 5min in the tin and then take it out until completely cool before icing.
For icing:
-Beat the butter in a large bowl with a hand mixer until really soft
-Add the cream cheese beat again then sift over icing sugar and zest.
-Once mixed until smooth store it covered in the fridge until needed (when you apply cut cake in half and put in centre and top.
For orange peel decoration:
-Peel stripes of orange zest
-Put water and sugar in saucepan on medium/high heat until sugar is completely dissolved.
-Then remove from the heat and put in your zest to wait until cool before decorating the cake.
